Easy Delicious Banana Bread

This banana bread is so good and easy to make. It is one of my favorite breads to make because I love all the flavors and the ingredients. Bananas are actually my favorite fruit! But what makes this banana bread special is the spices. I'm a really big lover of cinnamon so I usually tend to double my cinnamon amount on any recipe with cinnamon. There is cinnamon and nutmeg in this recipe. It makes it so flavorful and adds a lot of depth and warmth to the bread. You could always add pecans or chocolate chips to make it even more special and this would be great gift idea!

This recipe is so easy all you need is one bowl! First thing you'll want to make sure you have is very ripe bananas and to have one nice looking banana for the decorative banana on top if you choose to do that. If you don't have ripe bananas at the time then you can put them in an oven set to 300 for 30 minutes for smaller bananas and 40 minutes for medium to larger bananas. For the mashing technique I think the best tools are clean hands or use gloves. All I do is place them in my bowl before I add the other ingredients and mash them as much as possible (you can mash as less or as much as you want). If you don't want to use your hands then you can always use a fork or potato masher. Next I add all my wet ingredients except the melted butter and whisk until its combined. Then I add the butter, you wouldn't want to risk adding it before because it could scramble the egg :(. I like to sift my dry ingredients right on top of the wet in the same bowl and then fold it all together with a spatula and again I like to double up on the cinnamon. The batter should be thick and lumpy. All thats left is pouring the batter evenly into a greased 9 inch loaf pan and I like to line mine with parchment paper for easy come out.

For the decorative banana you'll need to slice the pretty banana length wise as best as possible and place it directly in the center of the batter and press down slightly to make it nice and snug. Preheat your oven to 350 and bake for 30-35 minutes. You'll end up with a beautiful banana loaf that smells amazing and is so delicious and moist!

RECIPE:

3 bananas plus one for decor (optional), ripe and mashed

1/3 cup of unsalted butter, melted

1/2 cup sugar, plus 3 tbs brown sugar

1 egg, whisked

2 tsp vanilla

2 tbs sour cream

1 1/2 cups flour

1 tsp baking soda

1 tsp baking powder

1 tsp salt

1-2 tsp cinnamon

1/2 tsp nutmeg

1. Preheat oven to 350. In a large bowl or extra large if you have one, place your 3 ripe bananas in the bowl and mash with your hands or your preferred method. Mash to your desired consistency.

2. Next add in the 1/2 cup of sugar and 3 tbs of brown sugar and whisk until combined. Mix in the already whisked egg. Add the vanilla and sour cream and combine.

3. Using a sifter add the flour, baking soda and powder, salt, cinnamon, and nutmeg. Using a spatula fold the ingredients together until just combined.

4. Grease a 9 inch loaf pan and line with parchment paper. Pour the batter into the pan evenly. Tap the pan on the counter to ensure its evenly dispersed. Place your decorative banana right in the center and press it down slightly.

5. Place the pan in the oven and bake for 30-35 minutes until golden brown and a toothpick comes out clean, Let rest for 10 minutes in the pan before removing. Allow to cool completely. Enjoy!
